Technically, the Manticore is a non-tamable boss. You can 'tame' it by modifying game files to treat it as a regular creature, allowing it to drop a soul gem upon death. You then respawn it to keep it as a tame. However, since it's not designed for taming, you'll face glitches like feeding or riding issues. Using a dedicated Mod is much more stable and recommended.
