An easy way to tame one of these is get lots of fish meat or raw meat or both , craft a club / one or two or more depending on the health , try to get behind it at its tail and keep hitting the tail , put the fish meat or raw meat or both in its inventory , wait a while and it will be yours ( reminder I did this on mobile I do not know if it works on any other consuls )

Get it stuck and slingshot it

Mad slow just use a crossbow even on 1x you can outrun it and tranq that jawn. Usually they are around swamps and if you are taming one for long I suggest putting wood spikes around it to protect it while taming

Using the fish meat that you can get from megapirana or any other fish it only takes between 10-13 to tame him at level 1-4
