On land they are relatively easy to defeat if you have a Bow. When you can use Pikes, Swords, and other stuff, you can defeat a Sarco using melee.
In the water, they will circle around you and make things difficult. Confront on land ONLY (if possible).
Standing on rocks usually does not help, as a Sarco can just lung at you and knock you off you little perch. Shoot the creature with Arrows and keep backing up. You may need to turn around and sprint a bit to stay ahead of it. You CAN outrun a Sarco on land.
If you kill one, make sure you harvest all the useful hide, meat, and Sarco Skin (a trophy).
At level 21 I had over 5 Sarco Skins, many from Sarcos with 10+ levels.
More Sarco Encountering Tips
If u see one of these go kill it or tame it they are a pain if they are on your island I have had these constantly spawn right where I live but thankfully I set up a nice spike wall along with watch towers be careful around these AND KEEP YOUR DINOS AWAY I learned my lesson already when it took down my first Dino my otter called cuddles.... please click up to pay respects.....
my dodo (lvl 4 at the time, thought he was dead until i whistled my other dinos to follow me) was apparently in the direction of the sarco (lvl 5). he walked right into the sarco and i was convinced he was dead meat. until the sarcoβs corpse just flew into the air. man, that dodo was a trooper

Both wild and tamed sarcos can do the death roll just like real crocodiles. At least they can do it on mobile, I donβt know about the other versions but I assume they can there as well.

I was flying around on my ptero when I crashed into a waterfall my pt flew to the side and I was on a ledge. I was about to jump off when I saw a sarcho below I shot at with pistol when I fell off and thought I was dead, but I managed to kill with sword .π³
You can easily outrun them if they start chasing you, heck even out walk them. But be careful in water they're super fast swimmers.
