Use a Tapejara, Griffin, or a flying mount with a passenger seat, or have a tribemate carry you while you shoot the Quetzal with tranquilizer darts. Chase it carefully until it is unconscious, preferably over safe land or inside a trap, then protect it from predators and feed it suitable taming food.
