Use a bow or crossbow from a distance, as its sting can rapidly increase torpor and knock you unconscious. If forced into melee, keep moving backward with a pike or spear to stay outside its reach, or kite it until it loses interest. A mount can also dispatch it safely, provided you avoid getting trapped or stung.
