Spinosaurus are fast and dangerous, especially in water, so avoid engaging them near rivers and flee inland if they pursue you. To fight one, use high ground, rocks, or sturdy barriers to keep it out of reach while attacking with ranged weapons, or have a powerful tame draw its attention.
