Make a small base on Fjordor between the small western island and the continent below that. Set up a grinder and kill Megachelons that spawn in the bay with even a mediocre water tame aka megladon or whatever just be mindful of Jelly's. Use the shell fragments in the grinder and never concern yourself with chitin again. You're welcome.

Moschops should be higher on the list. My 214 theri collects about 14 chitin per meganeura, moschops gets 60-80.

If you’re looking for a ridiculously large amount of chitin on the island go to the swamp cave with a megatherium. The swamp cave is located by the small swamp patch in the lake in the redwoods. I filled over 10 large storage boxes. Enjoy!

Take a Megatherium through the mission Along Came Pollen on Genesis 1. Just need to run on Gamma as Beta and Alpha will just slow you down if you are capable of doing them. Large amounts of chitin obtained from all the bug spawns.

The chainsaw gathers much more chitin than an axe does, even tho the axe is rated higher in gathering chitin

After messing around on ASA the moschops actually harvests chitin the best 400-600 per trilobite on smalls

You can kill a trolibite, then harvest it using a moschops. Out of one low level trolibite, I got 200+ chitin.
