- What kind of creature is it? -
The Ammonite is a creature that lives in the deep sea. It's quite harmless until you hit it. When you hit it, it sprays a kind of ink at you, which attracts the attention of absolutely every creature. Even neutral and timid underwater creatures will swim from a great distance to give you a good beating. Sometimes, even when you kill the Ammonite with one hit, it sprays ink at you for 10-15 seconds. So, don't just mess with it, especially if there's something quite powerful swimming nearby.

I don't even know what to write here...
But I'll tell you about one bug, though I don't know if it's still working or not. When you want to tame a mosasaur, it has a height peak, somewhere in the middle of the ocean depths. To reach this peak, you must hit the ammonite, causing it to release ink on you. Swim up to the mosasaur, and when it's close, slowly begin to rise upward during the ink timer. This will cause the mosasaur to glitch and swim to shallow water. The ammonite also drops useful resources.

Ammonite loot is abundant, and it's beneficial to kill it if you're on an Ichthyosaur (meaning you can avoid attacking creatures after inking):
